Getting Pad Thai just right

I have a thing with Pad Thai. I like it a very particular way, and I’ve never succeeded at making a good version at home. New Year’s Resolution #1: create the perfect at-home pad thai recipe.

Last night I made an okay version. The balance of ingredients was off, but here’s the recipe anyway – feel free to make some suggestions!

Sauce:
peanut oil, garlic & ginger; tamarind paste (1 tsp)
2 Tbsp rice vinegar
2 Tbsp fish sauce
3 Tbsp ketchup
3 Tbsp brown sugar
1tsp lime juice
1/4c soy sauce
splash of mirin

Tofu marinade (then fry before adding to other ingredients)
– pressed tofu
soy sauce (1/2 c)
1 tbsp sesame oil
garlic & ginger
1 tsp of chinese 5 spices

Vegetables, fried in a bit of peanut oil and a splash of sesame oil
Egg, fried
rice noodles.
