Macadamia Nut Cookies

As most of you know, my partner has an allergy to wheat, as well as chocolate. (I know, right?!?) So I’m frequently making things that are less delicious in an effort to not kill him, because I kinda like hanging out with him, despite the things he says.

However, yesterday I made something that might be more delicious because of it’s lack of wheat. Impossible, you say? Behold macadamia nut – kamut cookies:

1 1/2 cups of kamut flour
1 tsp salt
1 tsp baking soda
3 cups of rolled oats
1/2 cup of chopped nuts (or more if you’re feeling naughty)
1 cup of white and brown sugar, in whatever quantities you like. If you like sweet sweet things, add more sugar.
2 eggs
1 tsp vanilla
a splash of lemon juice

Shape into little balls and cook at 350 degrees for ten minutes. Enjoy!
