Cool winter night = comfort food

Tonight is pot pie night! I love me a delicious pot pie. Here’s what I made:

Sweet potato crust:
1 cup of flour (I used spelt)
1 tsp baking powder
pinch of salt
1 cup of pureed sweet potatoes
1/2 cup of butter
1 egg

The insides:
wild rice
red & white onions
mushrooms
thyme
oregano
rosemary
salt
pepper
carrots
peppers
potatoes
1 cup of vegetable broth
1/2 cup of table cream

Darn – I also wanted to add peas and totally forgot. They’d be good too.
